Blueberry Ginger Muffins

Blueberry Ginger muffins

Ingredients:-

Make 12 muffins

1.     1 cup flour.

2.     2 tsp baking powder.

3.     ½ tsp baking soda.

4.     ¾ cup organic cornmeal.

5.     1 tsp cinnamon.

6.     ¼ tsp salt.

7.     2 tsp flax seed + 6 tsp water.

8.     ½ tsp ground ginger.

9.     ¾ cup coconut sugar.

10.                         ¼ cup coconut oil.

11.                         1 tsp vanilla.

12.                         1 cup soy milk.

13.                         2 tsp fresh minced ginger.

14.                         1 tsp apple cider vinegar.

15.                         ¾ cup frozen blueberries.

Method

1.     Take a mixture of flax seeds and water (flax egg) in a mixing bowl. Stir it and keep aside for 2 minutes to thicken.

2.     Preheat oven to 350 and line muffin cups with oil.

3.     Combine flour, baking powder and soda, cornmeal, dried ginger and sea salt in a bowl and mix well.

4.     Pour soy milk, oil, vinegar and vanilla in a bowl containing flax egg and mix well.

5.     Fold in blueberries and fresh ginger and scoop the batter into muffin tins.

6.     Bake for 20 – 24 minutes.

Your Blueberry ginger muffins are ready to eat.
