Mexican Burrito

About the Recipe

Mexican burrito is a dish consisting of a flour tortilla wrapped into a sealed cylindrical shape around various ingredients. Easy to make and extremely healthy.

Ingredients

 

  • 1 avocado
  • 1/3 cup mayonnaise
  • 2 tbsp olive oil
  • 1/2 cup + 1 tsp coriander and 10-12 basil leaves
  • 2.5 tbsp pizza masala
  • 1/2 cup red and yellow bell peppers
  • 1 cup lettuce
  • 1/2 cup red or purple cabbage
  • 1/2 tsp black pepper powder
  • 1 lemon
  • 2 cups of mixed vegetables - carrot, capsicum, boiled sweet corn
  • 2 tomatoes
  • 1 tsp kashmiri red chilli powder
  • 200 gm panner
  • 2 cups of cooked rice
  • Grated cheese
  • Roti
  • Salt to taste

Directions

 

  • Take an avocado and cut it and scoop out the pulp and put 1/2 in a mixer and add 1/3 cup mayonnaise, 1 tbsp olive oil, 1/2 cup coriander, 1 tbsp pizza masala, salt, 10-12 basil leaves and grind it.
  • Chop 1/2 cup red and yellow bell peppers and take it in a bowl and add the avocado paste to it and the avocado dip is ready.
  • Take 1 cup lettuce , 1/2 cup red or purple cabbage and chop it. Add the remaining half avocado, salt to taste ,1/2 tsp black pepper powder, 1 lemon juice and mix well.
  • In a pan, take 1 tbsp olive oil, 2 cups of mixed vegetables - carrot, capsicum, boiled sweet corn and cook well and add salt to taste.
  • Then add 2 tomato puree, 1.5 tsp pizza masala 1 tsp kashmiri red chilli powder and mix well. Then add 100 gm panner. Then add 2 cups of cooked rice and mix well. Add 1 tsp coriander leaves and 100 gm paneer.
  • Take a roti in a tawa and cook a bit and add a little bit of oil to both the sides. Spread the avocado dip on the roti and add a lettuce leaf. Then add the cooked rice and the salad on it. Finally add grated cheese and fold the roti.
  • Store the burrito in Oddy uniwrap brown paper foil for later use.
