About the Recipe
We love Ice creams. We love cakes. How about a fusion of the two things we love! This is an easy recipe of an eggless ice-cream cake. Enjoy this yummy ice cream cake at the ease of your home now.
Ingredients
- 1 cup maida
- 1/4 cup cocoa powder
- 1 tsp baking powder & 1/2 tsp baking soda
- 1/2 cup sugar
- 1/4 cup refined oil
- 1/2 tsp vanilla essence
- 1/2 cup milk & 1 tsp vinegar
- 1/2 cup chilled sweetened whipping cream
- 3 tbsp condensed milk
- Cherries and choco chips
- Salt
Directions
- Take a rectangular cake tin and line it with Oddy Brown ecobake.
- In a bowl, seive 1 cup maida, 1/4 cup cocoa powder, 1 tsp baking powder, 1/2 tsp baking soda and mix.
- In a mixer, add 1/2 cup sugar,1/4 cup refined oil, 1/2 tsp vanilla essence ,1/2 cup milk, salt-2 pinches and 1 tsp vinegar and blend well.
- Add the blended mixture in a bowl and add the dry ingredients gradually and mix well. Add milk if the batter is thick.
- Pour the batter to the cake tin and bake in preheated kadhai for 35-40 minutes at low medium flame.
- In another bowl , take 1/2 cup chilled sweetened whipping cream and beat it until it stiffens. Then Add 3 tbsp condensed milk and beat again. Our vanilla ice-cream is ready.
- Take the cake out of the tin and remove the upper layer. Cut the cake into 3 horizontal layers and add sugar syrup, vanilla ice-cream and chopped cherries in between the layers. Crumb coat the entire cake with the ice cream and make it smooth on all sides.
- Decorate the cake with choco chips. Make flower designs on top of the cake and add cherries. Freeze for 5-6 hours and your delicious cake is ready.
