Ingredients

  • 1 cup maida & 3/4 cup powdered sugar
  • 1/4 cup melted butter & 2.5 tbsp sunflower oil
  • 1/4 cup curds & 1/3 cup milk
  • 1/2 tsp baking soda & 3/4 tsp baking powder
  • 1/2 tsp vanilla essence & 1.5 tbsp honey
  • 3tbsp mixed fruit/mixed berry jam
  • 2 tbsp sugar syrup & a pinch of salt

Directions

  • Combine the wet ingredients. Sieve the dry ingredients and mix them with the other ingredients to make cake batter. Adjust the consistency by adding milk.
  • Take a cake mould, line it with Ecobake cooking paper, and transfer the cake batter into it. Bake the cake for 40 minutes at 180 degrees Celsius in a preheated oven.
  • Once the cake is baked, trim the upper layer of the cake. Make sugar syrup by dissolving 2 tablespoons of sugar in half a cup of water and then adding honey once it reaches room temperature.
  • Further prepare the jam mixture by adding 3 tbsp of jam and water. Once the jam melts, switch off the stove. Soak the cake with sugar syrup, then apply the jam mixture and spread uniformly. Cut the cake into pieces and dip them in the honey-mixed sugar syrup and serve.
