Kesariya Karanji

About the Recipe

Karanji is a sweet snack which is often made during festivals particularly in Maharashtra. These half moon-shaped fried pastries are stuffed with a variety of items such as  coconut, dried fruits and other seasonings. Ecobake Cooking Paper Circles helps in getting perfect Karanjis without any frying  or greasing and no need of cleaning afterwards.

Ingredients

 

  • For saaran-1 fresh grated coconut ( 2 cups grated coconut), 1.5 cup jaggery, chopped nuts, 1 tsp cardamom nutmeg powder and 2 tsp ghee
  • For dough- 2 cups rice flour, 1 cup water and 1 cup milk, saffron (soaked in milk) and ½ tsp ghee

Directions

 

  • Heat ghee, roast coconut for a few mins, add jaggery and then mix well. Add nuts and cardamom nutmeg powder. Keep it aside and let it cool.
  • Now for dough- boil water and milk together. Add half tsp ghee and rice flour. Mix all of this well. Cook for 2-3 mins on low flame. Once it is done, cover with a lid and rest for 5 mins.
  • Don't allow the dough to cool and start kneading soft dough by adding water as required. Make small puris filled with saraan, then seal it and give it the shape of karanji.
  • Steam all karanjis in a steamer with the help of Oddy Ecobake cooking Paper circles. Once it is done, put ghee and serve Kesariya Karanjis.
