Coconut & Biscuit Barfi

About the Recipe

Coconut barfi is a traditional Indian sweet made on festivals and special occasions. Coconut barfi is also known by different names such as Tengai barfi, Kobbari barfi, nariyal barfi, etc. Oddy Ecobake is used to set the barfi mixture. Try this barfi recipe at home.

Ingredients

  • Coconut 1 whole
  • Biscuit packets 2
  • Jaggery powder 2 cups
  • Fresh cream 4 tbsp
  • Cardamom powder 2 tbsp
  • Cashew for garnishing

Directions

  • Slice the coconut, wash it and refrigerate it for half an hour. This will make the coconut a little bit dry and helps in easy grinding. We do not want wet texture for the barfi. Grind 2 packets of biscuits and keep aside.
  • Grind the coconut. In a kadai add oil, grinded coconut, biscuit powder. Let it roast for some time. Add jaggery, fresh cream and cardamom powder. Mix well and cook for 10 mins till the jaggery melts completely.
  • Let the mixture become a little thick and then switch off the gas stove. Remove the barfi mixture in Oddy Ecobake and let it cool for some time.
  • Now flatten the coconut barfi like a chapati, the thickness should be medium. Cut the barfi in diagonal shapes and add cashew in each barfi for garnishing.
