Four Layer Red Velvet Pastry

About the Recipe

A red velvet cake is easily recognizable by its red color and white cream cheese frosting. This recipe shows how to make a four-layer velvet pastry with only a half-cup of flour and no eggs. The cake is baked on a stove. If you want a soft and spongy cake that is perfectly cooked, then use Oddy Ecobake, which provides the grease for the bottom of the baking tray and helps the cake bake evenly.

Ingredients

 

  • Milk -3/4 Cup & Vinegar-1/2 Tsp
  • Powdered sugar -1/4 Cup & Oil-2 Tbsp
  • All purpose flour-1/2 Cup & Baking powder-1/4 Tsp
  • Baking soda-1/4 Tsp & Cocoa powder-1/2 Tsp
  • Red gel colour- 2 Drops & Whipping cream-1/2 Cup
  • Cake crumbs & Sugar syrup: sugar+ water
  • Oddy Ecobake

Directions

 

  • Line a baking tray with Oddy Ecobake. Take milk in a cup and add vinegar to it. Stir and let it rest for 10 minutes.
  • For dhokla batter, in a bowl take 2 cups of the premix powder, add one cup whisked curd. Add water gradually as per requirement for a smooth batter. After mixing, leave it covered for 30 minutes.
  • Now add the powdered sugar, oil, and prepared buttermilk to a bowl and whisk well. Add the sifted dry ingredients to it and mix well. Add a few drops of red gel color to it and mix.
  • Pour the batter into the baking tray. Cover and preheat a kadai for 5 minutes on the stove. Now place the baking tray into it, cover, and bake for 25 minutes. Check to see if the cake is baked using a toothpick. A clean toothpick means a perfectly baked cake.
  • Add whipping cream to a bowl and beat until stiff peaks form. Demould the cake when it has completely cooled, trim the top layer of cake, and cut the cake into two layers, which are then cut into slices.
  • Place the bottom layer on a baking sheet and moisten with sugar syrup. Now apply frosting and spread it uniformly. Now place the next three layers, one by one, on top of it and repeat the process.
  • Apply frosting on all sides. Make cake crumbs and keep them aside. Decorate with whipping cream filled in a piping bag, as shown, and garnish with cake crumbs. The cake tastes better when served chilled.
