Simple Caramel Carrot Cake

If you are excited about a festival coming up and planning to make an eggless, no-butter cake, then you have to try caramel carrot cake infused with grated carrots, caramel sauce, and tutti-frutti. If you do not like to clean the baking tray after baking, then use Oddy Ecobake, which is very convenient to use and reduces your effort in cleaning, thus saving time.

Ingredients

 

  • Sugar-1/4 Cup & Water-1/4 Cup
  • Grated carrot-1.5 Cup & Tutti frutti-1 Tbsp
  • All purpose flour-1 Cup & Sugar-1/2 Cup
  • Milk powder-1/4 Cup & Baking powder-1 Tsp
  • Baking soda-1/2 Tsp & Milk-1 Cup
  • Cardamom powder-1/4 Tsp & Vinegar-1 Tsp
  • Oddy Ecobake

Directions

 

  • Melt sugar in a pan at medium heat. Add water gradually and stir continuously. Add carrots to it, mix, and cook until it softens. Add tutti-frutti to it and mix well.
  • Sift the dry ingredients into a bowl, whisk, and mix. Add the cooked carrot mixture to it and mix well. Add milk gradually and mix well. Add cardamom powder and vinegar to it and mix well.
  • Line a baking pan with Oddy Ecobake. Preheat a kadai with a wire stand in it for 5 minutes. Pour the batter into the baking tin and tap well.
  • Cover and cook in the kadai for 20 minutes. Add the tutti-frutti on top after 20 minutes and bake again for 20 minutes. Check with a toothpick—a clean toothpick means a perfectly baked cake.
  • Demould after cooling completely. Cut into pieces as shown. The soft and spongy caramel carrot cake is ready.
