Eggless Christmas Plum Cake

About the Recipe

Today we are going to make the plum cake version, which is made with dry fruits and caramelized sugar. We can make this cake in a cooker or a kadai. Oddy Ecobake helps you line the cake mould to give the perfect shape for your cake without the need for additional cleanup.

Ingredients

 

  • Dry fruits & Orange juice - 200 ml
  • Sugar - 150 gm & Water - 150 to 160 ml
  • Maida - 200 gm & Milk powder - 3 tbsp
  • Oil - 1/4 cup & Vanilla essence - 1 tsp
  • Cocoa powder - 2 tbsp & Vinegar - 2 tbsp
  • Baking powder - 1 tsp & Baking soda - 1/2 tsp
  • Salt - 1/4 tsp & Oddy Ecobake

Directions

 

  • Soak the dry fruits in orange juice for 1 hour. Prepare the sugar caramel by melting it in a pan. Add water to the caramel and let it come to a boil. Switch off the stove and let it cool down.
  • Add the dry ingredients to the cake and mix well. Add unflavored oil, vanilla essence, caramelized sugar, and soaked nuts to the bowl and mix well to prepare the cake batter. Transfer the cake batter to a cake mould lined with Oddy Ecobake.
  • Bake the cake in a preheated kadai for 40 to 50 minutes. Add dry fruits to the cake batter when it rises. Once the cake is baked and cooled, cut it into small pieces and enjoy!
