Gobhi Pakode

About the Recipe

Gobhi pakode is an evening snack made from cauliflower florets marinated with spice powders, dipped in gram flour, and then fried in hot oil. It is served along with green chutney made from coriander leaves and spices. The pakode were made oil-free by placing them on a plate lined with Oddy Uniwraps, which are grease-proof and moisture-balancing and can also be used for packing.

Ingredients

 

  • Cauliflower florets & Turmeric powder-1/4 tsp +1/4 tsp
  • Salt-1/2 tsp + ½ tsp & Chaat masala=1 tsp & Red chilli powder-1 tsp
  • Carom seeds-1 tsp + 1/2 tsp & Garam masala-1/2 tsp
  • Besan or gram flour-1 ¼ cup & Coriander leaves-1 cup
  • Garlic pods-8 to 10 & Ginger- 1 inch
  • Green chilli-2 to 3 & Tomato-1 & Oil-for frying
  • Oddy Uniwraps

Directions

 

  • Heat water with salt and turmeric powder and drop the florets into it; boil for 7-8 minutes. Drain off the water from it.
  • To make green chutney, grind together coriander leaves, ginger, garlic pods, and green chillies with water to a paste.
  • Now add the turmeric powder, chilli powder, carom seeds, salt, chaat masala, garam masala, and green chutney to the cauliflower florets and mix together and marinate.
  • Add tomato and salt to the green chutney and grind to make chutney. Now take gram flour in a mixing bowl, add turmeric powder, red chilli powder, salt, and carom seeds to it, and mix along with water to make a semi-thick batter.
  • Dip marinated cauliflower florets in the batter and fry them in hot oil, cooking until they turn light brown. Take them out of the oil and press each of them using the back of a cup, then fry them again until they turn crisp.
  • Take them to a plate lined with Oddy Uniwraps to remove excess oil. Serve the gobhi pakode hot, along with green chutney and fried green chilies.
