Nutty Rose Kaju Katli

 

About the Recipe

You can quickly prepare kaju katli with a delightfully delicious, nutty texture. Kaju katli has a melt-in-your-mouth feel and is incredibly creamy, delicious, and decadent. Rooh Afza, a concentrated squash with fruit within, is used in this recipe to add a subtle flavor. Using Oddy Ecobake, a non-sticky, food-safe product, the kaju katli can be simply shaped into roses and sliced into diamonds without sticking.

Ingredients

 

  • Cashew nuts-2 cups & Sugar-1 cup
  • Water-1/2 cup & Ghee-1 tbsp
  • Milk powder-1/4 cup & Rooh Afza-1 tbsp
  • Red food colour-2 drops & Chandi vark or silver leaves
  • Oddy Ecobake

Directions

 

  • Refrigerate the cashews for half an hour and grind them into a coarse powder. Melt sugar in a pan with water and make sugar syrup until it comes to one string consistency.
  • Check the consistency by dropping in a cup of water. Add ghee to it and mix. Now add the ground cashew powder and milk powder to it and combine well by continuously stirring it.
  • Mix and cook for 5–7 minutes on a low flame. Switch off the flame when the mixture starts leaving the pan and comes to a ball-like consistency.
  • Now add Rooh Afza syrup and red food coloring to it and mix well until you get dough consistency.
  • Take a portion of it and press it between two sheets of Oddy Ecobake; keep it aside for 30 minutes. Garnish with chandi vark on top. Cut the rolled mixture into diamonds- shaped pieces as shown.
  • Take a small ball of the mixture, press it between Oddy Ecobake, and make roses as shown. Garnish with chandi vark on top. The delicious and attractive kaju katli is ready to taste.
