Eggless Strawberry Cake

Strawberry cake is everyone’s favorite, and when they are eggless and so easy to make, it becomes the perfect go-to cake recipe for any birthday or any small occasion

Ingredients

 

  • For Strawberry Sponge Maida or Refined flour- 1 cup+ 1/4 cup or-180 g approx
  • Refined oil- 1/4 cup or 50 ml
  • Sugar- 3/4 cup or 150g
  • Milk- 1/2 cup +1/4 cup or 150 ml
  • Strawberry essence- 1/2 tsp
  • Vinegar- 1 tsp
  • Baking powder- 1 tsp
  • Baking Soda- 1/4 tsp
  • For Strawberry Whipped Cream Frosting
  • Chilled whipping cream(sweetened)- 1 cup
  • Strawberry essence- 1/2 tsp
  • Pink gel food color
  • For Sugar Syrup
  • Sugar- 2 tbsp
  • Warm water- 1/2 cup
  • Cherries for decoration

Directions

 

  • Take a 6 inch cake tin, line it with Oddy Ecobkae baking and cooking paper, and set it aside for sometime.
  • Take a mixing bowl, add ½ cup of milk, 1 tsp vinegar and beat it properly to get buttermilk.Now add ¼ cup of refined oil, ¾ cup of powdered sugar, again mix them properly.
  • Now start adding dry ingredients, using a sieve add 1+¼ cup of all purpose flour, 1 Tsp baking powder and ¼ tsp baking soda. Mix them properly to make smooth and lump free batter. Then add ½ tsp of strawberry essence and mix it.
  • Transfer the batter into a cake tin, and place the cake tin in the kadhai which was pre heated for 5 mins on medium flame. Then bake the cake for 30-35 mins on low flame.
  • When done, demold it and let it rest to cool off.
  • To prepare whipped cream frosting, take 1 cup of chilled whipping cream in a mixing bowl and add 6-7 drops of strawberry essence. Beat it till you get stiff peaks.
  • Add 2-3 Drops of pink gel food color and mix it properly, to get pink whipped cream.
  • Take the demolded cake, divide it into 3 layers as shown. Now place the bottom layer on the cake table, soak it with sugar syrup and apply a layer of freshly prepared whipped cream.
  • Repeat the process with the 2nd and 3 rd layer. When done, cut 2 sides of the cake and replace them as shown in the video to give it a heart shape.
  • Crumb coat the cake, cover it completely with whipped cream and smoothen the surface using a card,
  • Using a star nozzle in a piping bag,make rose flowers on top of the cake as shown
  • Decorate the cake sides, and top it with the fresh strawberries,and your eggless strawberry cake is ready to serve.
