Homemade Tutti Frutti using Water Melon Rind

In this recipe video, you will see how you can use leftover water melon rind and transform it into colourful Tutti Frutti or Candied water melon peel which can be used as a topping for cakes, ice creams and other desserts.

Ingredients

 

  • Water melon rind - 2 cups
  • Sugar - 1 cup
  • Permitted edible food colours

Directions

 

  • Peel and discard the green part of the watermelon rinds using a peeler or a sharp knife.
  • Scrape off any red portion (fruit) that is still clinging onto the rinds.
  • Cut the white portion into strips and chop it into cubes.
  • Place the cubes in a steamer basket. Keep this steamer inside a cooking vessel with boiling water and cover it with a lid. Let it steam for about 5 minutes till it is nearly done. 
  • It should not be too soft but it should be cooked. Once it is done, turn off the stove.
  • In another vessel, take 1 cup of sugar and 2 cups of water.
  • Allow the sugar to dissolve and then add the steamed watermelon to it. Continue cooking this over medium flame till the syrup thickens to about 1 string.
  • Portion the cooked watermelon into three different bowls. Add a few drops of edible food colour according to your preference like lemon, apple green and orange red.
  • Cover it with a plate and leave it overnight for about 10-12 hours. Let it soak all the syrup.
  • In the morning, drain out the excess syrup.Keep the three colours separately and spread it out on Oddy Ecobake Cooking and Baking paper. Let it dry for sometime now.
  • Using Oddy Ecobake, your mould or plate will not be spoiled and also it will dry well. You can use this Tooti Frutti to decorate cakes and other desserts.
