Directions

  • Mix all the sifted dry ingredients in a bowl. Add melted butter, chocolate essence, sifted powdered sugar, and milk to it and whisk well to make a smooth batter.
  • Take a small cupcake mold, or katori, and line it with cupcake liners. Fill half of it with the batter and tap well. Preheat a kadai and place the filled katori. Cover and bake for 5 minutes on a medium flame and 25 minutes on a low flame.
  • Chop the almonds and keep them aside. Check if the cakes are baked and let them cool; refrigerate for 15 minutes. Melt dark chocolate using the double boiler method and place it in a bowl.
  • Dip the cupcakes in melted dark chocolate and garnish with almonds, then transfer them to a plate. Refrigerate for some time. The cupcakes are ready. Pack them in a carton box if you wish to gift them.
  • Line a box with Oddy Uniwraps, transfer the cupcakes, cover, and refrigerate to keep them fresh and without getting hard or dry for a very long time.
  • In the meantime, put the water for boil for placing the dhokla batter for steaming. Now pour the batter in the tray and pat the base to settle the batter equally. Sprinkle little red chilli powder on the batter.
  • Place the dhokla batter tray on the water. Cover it and let it steam for 10-15 minutes. After 12 minutes, check with a toothpick. If the toothpick comes clean, then dholkla is ready to be served.
