This creamy coconut ice cream recipe is vegan you can make it easily at home.

Ingredients
- Coconut milk
- Vanilla extract
- Sweetener of choice
- A pinch of salt
Directions
- Add the chopped coconut meat in a large bowl and add 1/2 cup cold coconut milk in it along with corn flour. Mix well and keep the bowl aside.
- Place a deep-bottomed pan over medium flame, add the remaining milk in the pan and bring it to a boil. Add sugar in the pan and stir until the sugar dissolves completely, and boil the mixture for 4-5 minutes. Keep stirring the mixture at regular intervals.
- Transfer the coconut milk and corn flour mixture into the pan, and stir simultaneously. Turn off the flame when done. Allow it to cool and add fresh cream.
- Line the container with Oddy Ecobake non stick liners and pour the mixture into it. Place the dish into the refrigerator. Let the mixture freeze for about 6-7 hours.
- Transfer the mixture into the blender jar and blend until you obtain a smooth form of it. Scoop out the ice cream when done and enjoy!
