Coconut Thick Chutney/Gojju

Follow the tricks given in the video. Coconut chutney/gojju can be prepared and stored for 15 days. This all in one gojju/chutney goes well with idli, dosa, chapathi, roti and rice. It is perfect for lunch box packing as well. Do try this recipe and let us know your experience in comments.

Ingredients

 

  • Oil - 1 Tbsp
  • Mustard Seeds - few
  • Urad dal - 1 spoon
  • Tamarind - 1 inch
  • Byadagi Chilli - 4 nos.
  • Guntur Chilli - 4 Nos.
  • Hing - 2 Pinches
  • Coconut Grating - 1 Bowl ( 1 Medium Size Coconut)
  • For Seasoning ( Oil - 2 Tbsp, Mustard Seeds - 1/2 spoon, Curry Leaves - Few)

Directions

 

  • In a pan, take one tbsp of oil, when oil is hot add very few mustard seeds and 1 spoon of urad dal. Roast it till urad dal turns golden brown. Now add 1 inch of tamarind and roast it as well.
  • At this stage, add 4 bydagi chillis & 4 nos. of guntur chillies and roast them until they puff up and slightly change colour. At this stage add 2 pinches of hing and mix it well.
  • Immediately turn off the stove and transfer the ingredients to another plate. Now in the same add a few pods of garlic (optional) and roast it till golden brown in color.
  • Add coconut grating to the same pan and roast the coconut till aromatic, slightly color changed and a little dry . Now transfer the roasted gratings to a plate
  • In a mixer jar, first grind the roasted chillies and other ingredients to fine powder without adding water and then include roasted coconut gratings and grind it to fine paste/powder without adding water.
  • When it is little fine powder, add just 1 tbsp of water and patiently make fine paste and now coconut thick chutney is ready.
  • In the same pan, add 2 tbsp of oil, 1/2 spoon of mustard seeds and few curry leaves and grinded coconut paste and saute it for 30 seconds to 1 minute. Tasty coconut thick chutney/gojju is ready
  • This All In One coconut chutney goes well with idli, dosa, chapathi, Rotti and Rice. It is perfect for lunch packing. To keep rotis for long, use Oddy Uniwraps, along with this coconut chutney it tastes awesome. This chutney can be stored in refrigerator for 15 days.
