Ingredients

  • 2 Tomatoes, 3 Garlic cloves & 1 inch ginger
  • 2 to 3 tbsp Rava & 1 tbsp red chilli powder
  • Salt as per taste
  • 1 cup leftover rice
  • 1 packet maggi/noodles/garam/chat masala
  • Coriander leaves
  • Ghee, mustard seeds and urad dal for tempering

Directions

  • Grind together 2 chopped tomatoes, 3 garlic cloves, and an inch of ginger in a mixer jar. In a bowl, add 2 to 3 tbsp of rava and mix with water. Allow this rava paste to rest for 5 minutes.
  • Add 1 tbsp of red chilli powder, salt and 1 packet of noodles masala, or garam masala, or chat masala. Add 1 cup of left over rice to this tomato paste. Now add the rava paste to the tomato paste and mix well.
  • For tempering, add 1 tbsp butter, mustard seeds, and urad dal to a hot pan. Transfer this tempering to the rava and tomato paste. Add the chopped coriander leaves and mix all the ingredients well.
  • Take an utappam pan, greased with oil or ghee, and pour the batter into the pan. Flip the utappam once it is cooked on one side. Let both sides of the utappam be cooked.
  • Transfer these mini utappams to your tiffin box wrapped with Oddy Uniwraps paper foil. This will stay fresh for a long time without becoming soggy.
