Eggless Atta Cake with Walnuts

About the Recipe

This is the most simple and healthy walnut atta cake recipe, made with whole wheat flour and walnuts. This comes out very spongy and fluffy. Oddy Ecobake helps you get the perfect shape for your cake with no need for additional cleanup.

Ingredients

 

  • Atta or whole wheat flour- 1 cup & Chopped Dates- 10
  • Chopped Walnuts- 1/4 cup + for decoration
  • Jaggery powder or Gud- 1/2 cup & Refined oil- 1/4 cup
  • Milk- 1/2cup + 1/4 cup + 2-3 tbsp & Oddy Ecobake
  • Vanilla essence- 1/2 tsp & Baking powder- 1 tsp
  • Baking soda- 1/4 tsp, Vinegar - 1 tsp & Salt- 1/4tsp

Directions

 

  • Grind deseeded and chopped dates with jaggery powder and milk in a mixer jar to a fine paste.
  • Transfer the paste to a mixing bowl and add oil to it. Add the dry ingredients to the bowl through a sieve.
  • Combine everything well to form the cake batter. Add vanilla essence and vinegar to the batter and mix well.
  • Add milk to adjust the consistency of the batter, and add chopped walnuts to it. Transfer the batter to a mould lined with Oddy Ecobake.
  • Add a few more chopped walnuts on top of the batter. Bake the cake in a preheated kadai for 35 to 40 minutes.
  • Once the cake is baked completely, switch off the stove. Demold the cake and remove Oddy Ecobake. Your atta walnut cake is ready!
