Gulam jamun as a sweet is one of the classic desserts. Today, I’m combining the super classic dessert gulab jamun with cake to make gulab jamun cake. This cake is super easy to make. Oddy Ecobake can be used to line the baking tin. Oddy Ecobake helps in easy demolding of the cake.

Ingredients
- Oddy Ecobake
- Vanilla premix 160 gms
- Oil 1 tbsp
- Water 3/4th Glass
- Rasmalai Essence ½ tsp
- Gulam Jamun 6 nos.
- Chopped cashew, almonds, pista
- Rose petals 7-8 chopped nicely
- Whipping cream
- Liquid red color 2-3 drops
- Noor 46, noor 7 nozzle
Directions
- In a bowl mix vanilla premix, oil, water and rasmalai essence. Whisk and make sure no lumps are formed. Line the baking tin with Oddy Ecobake. Oddy Ecobake helps in easy demolding of the cake. In a bowl smash 3 gulab jamun and keep aside.
- Pour the cake batter in tin and tap it to remove any air bubbles from it. Take a deep vessel and keep wire stand on it. And keep our baking tin on it. Close it with a lid and cook on low flame for 35-40 mins. Do not preheat the vessel. After baking let it cool down to normal temperature.
- Let it cool down and demold the cake. Add a little whipping cream on cake board and assemble the sponge cake. Cut the cake in three layers. Separate gulab jamun and its juice. Take 2-3 tbsp of gulab jamun juice and add equal quantity of water to make sugar syrup.
- Add this sugar syrup in sponge. Apply whipping cream, add smashed gulab jamun and chopped dry fruits. Repeat the same process for second layer. Add the third layer of sponge and add sugar syrup. Crumb coat the cake completely.
- Add liquid red color to whipping cream and beat it. Cover the cake with pink whipping cream and use a palette knife to level the cream on cake.
- Cut the gulab jamuns into halves. Make rossets with nozzle. Add gulab jamun on top and sides. Decorate with crushed and chopped nuts on top and sides. Sprinkle rose petals and decorate the cake. Our gulab jamun cake is ready.
