Kulfi Cake

A vanilla flavoured sponge cake with added kulfi, this cake is surely going to bring your childhood memories. Enjoy the richness of Kulfi in this cake. Follow the correct measurements to get the perfect soft consistency of the cake. Use Oddy Ecobake to line the baking tin. Oddy Ecobake is non-sticky and grease-proof.

Ingredients

 

  • Oddy Ecobake
  • Vanilla premix 160 gms
  • 1 ½ tbsp oil
  • 3/4th cup water
  • Rasmalai essence ½ tbsp
  • Mawa kulfi 70 ml
  • Sugar 2 tbsp
  • Cashew, almonds, pistas, rose petals chopped
  • White chocolate compound 50 gms
  • Chocolate mold
  • Liquid yellow color
  • Noor N1, noor 14 nozzle

Directions

 

  • In a bowl add vanilla premix, oil and water. Whisk the batter well to form a cake batter without any lumps. Line the baking tin with Oddy Ecobake. Oddy Ecobake helps in easy demolding of the cake.
  • Pour the cake batter in tin and tap it to remove any air bubbles from it. Take a deep vessel and keep wire stand on it. And keep our baking tin on it. Close it with a lid and cook on low flame for 35-40 mins. Do not preheat the vessel. After baking let it cool down to normal temperature.
  • Cut the sponge cake in 3 layers. Take mawa kulfi and 3/4th kulfi in one bowl and the rest in another bowl. Add little milk to the 3/4th kulfi and 2tbsp sugar to make kulfi syrup.
  • Melt the white chocolate with the double boiler method. Add rose petals on chocolate mold and pour white chocolate over it. Tap it and keep in refrigerator for 15-20 mins.
  • Take a cake board and apply whipping cream on it. Assemble the first sponge layer and add kulfi syrup on it. Add whipping cream and level it with a palette knife. Apply melted kulfi on top and spread it nicely. Add chopped nuts to decorate it.
  • Repeat the same on the other layer as well. Add the third layer and apply kulfi syrup. Apply whipping cream on the sides of the cake. Add liquid yellow color in whipping cream while beating. Add yellow colored whipping cream on top and sides of the cake.
  • Level it with a palette knife. Make rosset on top for decorating. Apply border on the bottom of the cake. Remove while collocate from mold and add on sides of the cake. Spread nuts on the top of rossets and sprinkle rose petals on the centre of the cake. Our Kufi cake is ready.
