Christmas special Rich British Plum Cake is full of nutty, dry fruits and tastes and smells delicious. It is no eggs, no alcohol plum cake. While baking, the base gets stuck to the cake tin. To solve this, use Oddy Ecobake Cooking Paper Circles. It comes in precut sizes and is easy, healthy, and reusable for future use.

Ingredients
- 1/4 Cup sugar (50 grm), 1/3 cup water
- 1 cup orange juice (180ml), 300 gram dry fruits (pista, badam, anjeer, dates, candid, fruits tuti fruity cherry, walnuts, cashew)
- 1/2 cup brown castor sugar, 1/4 Cup butter or 1/4 Cup oil (100 grm)
- 1 tsp vanilla essence, 2 tablespoon curd (40 grm)
- 1/2 tsp baking powder, 1/2 tsp baking soda
- 1 tsp cinnamon powder, 1/2 tsp Ginger powder
- 1/2 tsp cinnamon powder, 1/4 tsp clove Powder
- 1/4 tsp nutmeg powder, 1 & 1/2 cup all purpose flour 190 grm
- 1/4 th cup cocoa powder (25 grm), 2 tbsp curd
- 1 tsp vanilla essence, Oddy Ecobake Cooking Paper Circles
Directions
- In a pan melt sugar and caramelize it. Once it thickens, add water and keep sitting until it dissolves. Now add orange juice and stirr it.
- Now bring this mixture to a boil. Add all the chopped dry fruits the mixture. After 2 mins, add oil and butter to the mixture and mix it till butter is completely blended.
- Next add brown castor sugar and mix well. Simmer it on low flame. Then cover the pan and let it thicken. (5-10 mins). Now, on a bowl place a strainer.
- Add maida, cocoa powder, baking powder, and baking powder. Further add cinnamon powder, ginger powder, clove powder, jaiphal powder.
- Sieve all the dry powders together. Now check the cooled dry fruits mixture. Add 1 tsp vanilla essence and curd and mix well.
- Now add this to the dry ingredients and mix well till a smooth batter is formed. Now take a cake tin and line it with Oddy Ecobake Cooking Paper Circles.
- Pour the batter and spread it evenly. Bake it at 180 degree for 30-35 mins. Once baked, let it cool and cut into slices and serve.
