Soft and Fluffy Plum Cake without an Oven

Try this super soft, fluffy plum cake for Christmas. This cake will be filled with lots of flavours and nuts. Oddy Ecobake helps you bake the plum cake without greasing the mold. It also aids in the easy demolding of the cake.

Ingredients

 

  • 1/3 Cup sugar, 1/4 Cup water & 2 Tbsp black raisins
  • 2 Tbsp chopped almonds & 2 Tbsp chopped cashew
  • 2 Tbsp Cherry, 2 Tbsp walnut & 2 Tbsp wet dates
  • 3 Tbsp tutti frutti & 1/2 Cup orange juice
  • 1/3 Cup sugar, 1/2 inch cinnamon & 3 Pieces cloves
  • 3 Pieces green cardamom & Nutmeg
  • 3 Pieces green cardamom & Nutmeg
  • 1/4 Tsp ginger powder & 1 Cup all purpose flour
  • 1/3 Cup milk powder & 1 Tsp baking powder
  • 1/2 Tsp baking soda, 1/3 Cup water & Oddy Ecobake
  • Black raisins, cashew tutti frutti, cherry for topping

Directions

 

  • Melt sugar in a pan. Once it caramelizes, sauté the dry fruits in it. Keep them aside in a bowl and add orange juice to it. Soak the caramelised nuts in the orange juice.
  • Grind sugar, cloves, cinnamon, cardamom, and ginger powder in a mixer jar to a fine powder. Add the sugar mixture, maida, and milk powder through a sieve to the soaked nuts.
  • Mix them well to prepare the cake batter. Transfer the cake batter to a cake mould lined with Oddy Ecobake. Preheat the salt-filled deep-bottomed vessel.
  • Bake the cake for 35 to 40 minutes in the vessel. Once the cake is completely baked, demold it. Cut the cake into small pieces and enjoy!
