Soft and Spongy Suji Cake Without Eggs, Butter and Oil

About the Recipe

Make this delicious and spongy cake with suji or semolina. You do not need eggs, an oven, butter or oil to make this cake. Even without oil, this cake will turn out to be amazingly soft. Ecobake helps in getting the perfect shape for your cake without any greasing and no need for cleaning afterwards.

Ingredients

 

  • 1/2 cup sugar & 1 cup hot milk
  • 1 cup semolina & 2 tbsp milk cream
  • 1 tsp vanilla essence & Chopped nuts
  • 1 tsp eno + 1 tsp milk

Directions

 

  • In a mixing bowl, add sugar and hot milk and mix until the sugar dissolves. Take 1 cup of semolina and grind it in a mixer jar to make a fine powder.
  • Add semolina to the milk, mix well, and a thin batter will be ready. Add 2 tbsp milk cream/fresh cream to the batter and mix everything well. Cover the bowl and keep it aside for 15 minutes.
  • Using Ecobake cooking paper circle, line a 6 inch cake tin. Add 1 tsp of vanilla essence or cardamom powder and mix well. Take a sachet of eno and add 1 tsp of eno to the batter or 1 tsp of baking powder.
  • Add 1 tsp milk on top of the eno, mix & the batter will become light and frothy. Transfer the batter to the cake tin, tap a little, and sprinkle some dry fruits.
  • Cover and bake the cake for 50 minutes on a low flame in a preheated vessel on the stove. You can also bake the cake in a preheated oven at 170 °C for 40-45 minutes.
  • If you want to give the cake a dash of golden color, you can keep it on the flame for 5–10 minutes more. Remove the cake from the vessel and let it cool down completely.
