Ingredients
- All Purpose Flour / Maida - 1 ¼ cup / 150 grams
- Salt - ½ tsp
- Baking Powder - 1 tsp
- Sugar - 1 cup / 200 grams
- Lemon zest - 1 tblspn
- Eggs - 2
- Ricotta Cheese - ½ cup
- Vanilla Essence - 1 tsp
- Melted Butter - ⅓ cup / 80 ml
- Lemon Juice - 4 tblspn
- Milk - ¼ cup / 60 ml
Directions
- Preheat oven to 180 degree C. Grease a bundt pan or any pan with oil, sprinkle with flour and coat on all sides. Tap off the excess.
- Take sugar, lemon zest in a bowl and mix well.
- Add in eggs, lemon juice, vanilla, ricotta and whisk well.
- Add in flour, baking powder, salt and mix well gently.
- Now add in milk and fold gently.
- Spoon this into the pan, line the baking tray with oddy ecobake parchment paper and bake for 50 to 55 mins.
- Remove them and let it cool for 10 mins in the pan, now invert it on a cooling rack and cool completely.
- Dust with icing sugar and serve.
