Lemon Ricotta Cake

Light, fluffy, and full of flavor, it is the perfect Italian dessert. Easy and simple recipe made with ricotta cheese and lemon.

Ingredients

  • All Purpose Flour / Maida - 1 ¼ cup / 150 grams
  • Salt - ½ tsp
  • Baking Powder - 1 tsp
  • Sugar - 1 cup / 200 grams
  • Lemon zest - 1 tblspn
  • Eggs - 2
  • Ricotta Cheese - ½ cup
  • Vanilla Essence - 1 tsp
  • Melted Butter - ⅓ cup / 80 ml
  • Lemon Juice - 4 tblspn
  • Milk - ¼ cup / 60 ml

Directions

  • Preheat oven to 180 degree C. Grease a bundt pan or any pan with oil, sprinkle with flour and coat on all sides. Tap off the excess.
  • Take sugar, lemon zest in a bowl and mix well.
  • Add in eggs, lemon juice, vanilla, ricotta and whisk well.
  • Add in flour, baking powder, salt and mix well gently.
  • Now add in milk and fold gently.
  • Spoon this into the pan, line the baking tray with oddy ecobake parchment paper and bake for 50 to 55 mins.
  • Remove them and let it cool for 10 mins in the pan, now invert it on a cooling rack and cool completely.
  • Dust with icing sugar and serve.
