We all love rasmalai as a sweet desert. Why not incorporate it into Ice cream. Try this rasmalai ice cream following my step-by-step guide. Use Oddy uniwraps to cover the lid of your container while making the ice cream to prevent the formation of ice crystals.

Ingredients
- ½ liter milk
- 2 ½ tsp gsm powder
- 2 ½ tsp corn flour
- 1/4th tsp cmc powder
- ½ cup sugar
- 1/4th cup whipped cream
- Rasmalai
- Chopped nuts
- Rasmalai essence 1/4th tsp
- Liquid yellow color 2-3 drops
Directions
- In a bowl add 3/4th of the milk and sugar mix well. In another small bowl add the remaining milk, gsm powder, corn flour, cmc powder, stir without any lumps and add to the bowl with milk and sugar.
- Now place the vessel in gas stove and keep on stirring to avoid any lumps. Cook the mixture till it thickens a little and remove from heat and let the mixture cool down on room temperature. Transfer the mixture into a container and wrap it with Oddy uniwraps cooking paper. Now close the lid, covering the lid with oddy uniwraps prevents it from forming ice crystals in your ice cream.
- Keep it in freezer for 8 hours. Remove after 8 hours and smash the ice cream mixture with a spoon. Then use a beater to beat the ice cream. Beat the mixture until fluffy to form a nice consistency.
- In a separate bowl take 3/4th cup cold whipped cream and beat nicely. Consistency of the whipped cream should be slightly thin. Now add the whipped cream in our ice cream mixture and mix it well with a spatula and again beat the mixture with beater. Keep it in refrigerator. Our base ice cream is ready.
- In a bowl take ice cream base and add rasmalai essence, 2-3 tsp milk from the rasmalai, liquid yellow color, mix well. Smash the rasmalai balls and add in the ice cream. Finish by adding the chopped nuts.
- Once done close it with oddy uniwraps paper and close the lid. Oddy uniwraps paper will prevent the formation of ice crystals. Keep it in the freezer for 8 hours to set the ice cream.
