Besan Kadhi With Pyaaz Ki Pakodi

About the Recipe

Kadhi is a popular north Indian dish made with besan and curd as the main ingredients, along with various spices, and served with gram flour pakodis dipped in it. This curry goes well with hot rice. The pakodis are made oil-free by taking them from oil on to a plate lined with Oddy Uniwraps, which is very convenient since it is greaseproof and moisture-balancing.

Ingredients

 

  • Panch phoran-1 tbsp + 1 tsp & Garlic-4 pods
  • Ginger-1 inch & Green chilli-2 &
  • Onion Sliced-3 & Turmeric powder-1/2 tsp + 1/4 tsp
  • Besan or gram flour-4 to 5 tbsp + 1/2 cup & Carom seeds-1/2 tsp
  • Salt- to taste & Red chilli powder-1/2 tsp + 1 tsp
  • Water & Curd-1/2 cup
  • Oil-for frying & Asafoetida-1/8 tsp
  • Ghee-for tempering & Dried red chilli-1
  • Oddy Uniwraps

Directions

 

  • Crush panch phoran in a masher. Also, crush together ginger, garlic, and green chilies and make it into a paste. Take sliced onions in a bowl and add crushed panch phoran, ginger chili paste, turmeric powder, besan flour, carom seeds, red chili powder, and salt to it.
  • Mix well with enough water. Heat oil in a pan and drop them as small pakoras. Fry the pakoras in it until they turn brown and crisp.
  • Take them to a plate lined with Oddy Uniwraps. This removes excess oil from the pakoras and makes them stay crisp. The pyaaz ki pakodi is ready.
  • Sift the gram flour and curd into a bowl and mix them along with water to make a smooth batter. Heat oil in a pan and add fenugreek, panch phoran, asafoetida, turmeric powder, and red chilli powder to it and stir.
  • Then add the batter to it and adjust consistency. Let it cook for 10 minutes. Then add the pyaaz pakodi to it, let it boil for 10 minutes, and add salt to it. Switch off the flame. The besan kadhi is ready.
  • To add taste, heat ghee in a tempering pan, add a dried red chili and chopped onions, and let it fry.
  • Then add red chili powder after switching off the flame. Pour it over the besan kadhi, cover it, and let it rest for 10 minutes. The besan kadhi with pyaaz ki pakodi is ready. Serve with hot rice.
