Marshmallow without Corn Syrup

Follow my easy step-by-step guide to make the perfect marshmallows without adding corn syrup. You can customise the colors and design according to your preference. Ingredients

 

  • Cup measurement - 250 ml
  • 2 tbsp unflavored gelatin
  • 1/2 Cup water
  • 1 Cup sugar
  • 1/4 Cup water
  • 1/4 Tsp vanilla essence
  • 2 Drop pink gel colour
  • Oddy Ecobake

Directions

 

  • Take a square mold and line it with Oddy Ecobake. Oddy Ecobake is grease-proof and eco-friendly, hence a perfect option for baking. Dust icing sugar on it.
  • In a small bowl take unflavored gelatine and add water. Stir and let it rest for 10 mins. In a pan take sugar and water, stir and melt till sugar dissolves completely. Cook until bubbles are formed. Check the consistency by adding the sugar droplet in a water bowl. If soft ball is formed then the consistency is perfect.
  • Add mixed gelatin in the sugar syrup. Stir and mix. Transfer in a bowl. Cool slightly and whisk. Whisk until fluffy. Whisk at low speed on 5 min. it should form a fluffy consistency.
  • Add vanilla essence and mix well. Transfer half portion in mold. Spread uniformly. In the remaining mixture add pink gel color, whisk and mix well. Pour this into the mold. Spread uniformly.
  • Refrigerate for 1 hour. Remove from mold from sides after an hour. Dust icing sugar. Dust icing sugar on knife. Flip and dust icing sugar on the base as well. Trim edges. Cut into small pieces. Soft and spongy marshmallow is ready.
