Sarson Da Saag With Maake Di Roti

Sarson da saag and maake di roti are classic Punjabi dishes. Sarson means mustard, and saag means green. This is a special winter recipe made for dinner. The maake di roti is made from maize flour atta and then rolled between Oddy Ecobake, which is so useful to roll roti that do not stick to the rolling board since it is non-sticky. Also, Oddy Ecobake is reusable when made in batches.

Ingredients

 

  • Spinach or Palak leaves & Mustard or sarson leaves
  • Ginger-7 to 8 pods & Garlic -1 inch
  • Green chillies-2 & Onion-1 & Garlic
  • Tomato & Ghee
  • Turmeric powder & Chilli powder
  • Garam masala & Coriander powder
  • Maize flour atta & Salt & Water
  • Oddy Ecobake

Directions

 

  • Wash and cut spinach leaves and mustard leaves. Add it to a cooker along with ginger, garlic, green chilies, and salt with a little water and cook for half an hour.
  • Chop the onions, tomatoes, and garlic and set aside. Grind the cooked leaves to a puree and keep it aside.
  • Heat the ghee in a pan and add cumin, onions, tomatoes, and garlic to it; stir well. Then add the spice powders and salt to it and stir well.
  • Add the pureed leaves to it and cook well, adding maize flour atta and a little hot water to make a gravy.
  • For tempering, add cumin, chopped garlic, hing, red chilli, and red chilli powder to ghee, fry, and add it to the gravy. The Sarson da Saag is ready.
  • Now to make maake ki roti, knead the maize flour with water and salt and make it into a dough.
  • Take small balls of dough and roll it flat between Oddy Ecobake, then cook it on both sides on a tawa until brown spots appear.
  • Grease with oil or ghee. Serve it with hot Sarson da Saag.
