Ingredients

  • ½ cup shredded cabbage.
  • ¼ cup long cut carrot.
  • ¼ cup capsicum.
  • ¼ cup chopped onion.
  • Salt.
  • 2 cup wheat flour.
  • Oil of your choice.
  • ½ tablespoon chopped garlic.
  • ½ tablespoon of crushed ginger.
  • 1 tablespoon of chopped up green chillies.
  • ½ tablespoon of crushed black peppers.
  • 1 tablespoon tomato ketchup.
  • 1 tablespoon vinegar.
  • 1 tablespoon soya sauce.
  • 2 tablespoon red chili sauce.
  • 1 tablespoon corn flour.
  • 2 tablespoon all purpose flour.

Directions

  • Mix cabbage, carrot, capsicum and onion in a bowl with one tablespoon of salt and mix well. Set aside.
  • Mix wheat flour with ½ tablespoon of salt and ½ of oil. Mix well, while gradually adding water as required.
  • Keep kneading until you get soft dough. Cover and let the dough rest for 10 minutes.
  • Now strain the veggies and remove the excess water by squeezing it in a table cloth.
  • Add ½ tablespoon of oil on a pre heated pan.
  • Now add ½ tablespoon of chopped garlic, 1 tablespoon of crushed ginger and 1 tablespoon of chopped up green chili and sauté for a minute.
  • Once it turns brown, add the veggies and sauté well.
  • Add ½ tablespoon of salt, ½ tablespoon of crushed black peppers, 1 tablespoon of tomato ketchup, 1 tablespoon of vinegar, 1 tablespoon of soya sauce and 2 tablespoon of red chili sauce to the ingredients and mix well.
  • Now add 1 tablespoon of corn flour and mix well. The vegetable filling is now ready! Set it aside.
  • Now knead the wheat flour for another 10 minutes and take small portions of dough and make it into small balls of dough.
  • Add some wheat flour dust on the balls and roll into thick layers.
  • Take the layers and add oil on it and dust wheat flour on it. Now place another layer and do the same. Repeat this for 3 layers of wheat sheets.
  • Now roll this further to make it into a thin layer and place the layer on tawa and cook on either sides. This way each layer of wheat is cooked on only one side. Repeat this process for all the sheets.
  • Now mix 2 tablespoon of all purpose flour with required amount of water and make it into a slurry paste.
  • Place the vegetable filling on one side of the wheat roti (layer) and apply the slurry paste we made on the other corners of the roti.
  • Fold it into a nice pocket and deep fry it in medium hot oil and fry until it is golden brown.
  • Remove it from oil and strain the excess oil and serve it hot!
  • You can also wrap it in Uniwrap papers to store and use it for later!
