If you are a coconut loving person , you can just not give kopra pak a miss! This is a delectable delight made of sugar and coconut sure to woo your sweet tooth. Mostly known for its coconutty flavour in Konkan and Gujarat regions, this sweet has found it’s place in every dessert lover’s heart. Oddy Ecobake Parchment Paper works as a tray liner preventing the dish from sticking to sides and bottoms. Made out of food grade paper, it is healthy to use as well !

Ingredients

 

  • 4 Cup Dessicated Coconut
  • 1 + 1/2 Cup Unsweetened Khoya/Milk Mawa
  • 1/2 tsp Cardamom Powder/Elaichi Powder
  • 2-3 drops Edible Yellow Food Colour
  • 1 + 1/2 Cup Sugar
  • 3/4 Cup or As required Water

Directions

 

  • Cup used for measurement in recipe - 250 ML Take dessicated coconut in a bowl and keep aside.
  • In a separate pan, we will prepare sugar syrup. Take sugar and water and boil at a low flame initially. Later, it can be cooked at medium to high flame unless the desired consistency is achieved.
  • Once the desired consistency is achieved, add mawa . Make sure the Mawa used for the recipe is at room temperature. Break all the lumps by stirring continuously using a spatula.
  • Once the mix becomes smooth, add cardamom powder and edible food colour. Give a good mix.
  • Now add the dessicated coconut and stir well at a very low flame. You can make double layered white and pink kopra pak also. For pink colour, you can use edible pink colour and rosewater for aroma and flavour.
  • Switch off the flame when you achieve the desired consistency. To check the consistency, let the mixture be warm and try making roundels out of it. If the roundels are retaining shape, that means the mixture is of right consistency.
  • Line a baking tray with Ecobake Cooking Paper for a non sticky dessert preparation experience. Spread the kopra pak mixture evenly so that it can later be cut into barfis.
  • Once the Kopra Pak is set with desired height and is at room temperature, garnish it using a silver leaf for a festive look.
  • Now take out the set kopra pak from the tray and cut into barfi-shaped pieces and serve.
