Kothimbir Wada

From Maharashtrian cuisine, Kothimir vadi is a savory crispy snack made with gram flour (besan), coriander leaves, and spices. Pan-fried or deep-fried, these savory, herby and flavorful bites can be eaten with a cup of tea. Storing them in containers lined with Oddy uniwraps helps to keep the wadis fresh and flavorful throughout.

Ingredients

 

  • For Kothimbir wadi: 2 cup fenugreek leaves
  • ½ cup coriander leaves
  • 2 green chillies
  • 3 garlic
  • 1 onion
  • 1 cup gram flour
  • ½ tsp carrom seeds
  • 1/8th tsp garam masala
  • ½ tsp turmeric powder
  • 1 tsp chilli powder
  • ½ tsp cumin powder
  • Water for making the dough
  • 2 tsp rice flour
  • Salt as required

Directions

 

  • In a bowl add all the ingredients for the kothimbir wada and mix together adding water to form a dough. Add 2 tsp rice flour and mix again and add salt and adjust the taste.
  • Make it into small wada shapes and fry them till golden brown on medium flame. Serve hot with green chutney and sauce.
  • Keep the Kothimibir wadi in Oddy uniwras to keep it crispy and fresh all day long.
