Kulfi With Rusk and Caramelized Sugar

Make this creamy and tasty kulfi recipe with rusk and caramelized sugar. We only need a handful of ingredients to make this kulfi. We are first going to make the kulfi powder, which can be stored for 3 months. Ecobake cooking paper helps to make the praline with caramelized sugar.

Ingredients

 

  • Sugar – 1 cup & Water
  • Rusk – 4 to 5 pieces
  • Cardamom powder
  • Milk powder – 3 to 4 tbs
  • Badam and kaju & Milk – 1 cup
  • Chopped pistachio

Directions

 

  • Caramelize sugar in a pan with a little amount of water. Make praline by letting the caramelized sugar dry on Ecobake cooking paper. 
  • Make the kulfi powder by grinding together rusk, badam, cashew nuts, cardamom powder, milk powder, and caramelized sugar in a mixer jar. 
  • Heat milk in a pan. Once the milk starts boiling, start adding kulfi powder to the milk gradually and stir well. Once the milk starts thickening, switch off the stove and let it cool down. 
  • Transfer this kulfi base to the kulfi mould. Freeze the mould for 7 to 8 hours. Demould the kulfi after 8 hours and garnish with chopped pistachios.
