About the Recipe

Special Potato Vadi is soft and yummy. It is filled with sweetness and coconut. While making this potato vadi, while rolling it may stick to the base. To prevent this, use Oddy Ecobake. Just place a sheet of it and roll out nonsticky delicious potato vadi easily. No need for oiling or greasing.

Ingredients

 

  • 1 big cup fresh cocont (grated)
  • 1 cup boiled potatoes (grated), Oddy Ecobake,
  • 1 cup sugar, 1 tbsp ghee, ½ tsp elachai powder
  • 4-5 peda or khawa (optional), 1 pinch of salt
  • 1/4 tsp sugar, 1/2 tsp green chilli paste & 1/4 tsp eno

Directions

 

  • Take a deep bottom pan or kadhai. Add the ghee, coconut, sugar, potatoes. Saute on medium flame and mix well.
  • Add a pinch of salt. Keep the gas on low. Now add crushed peda and again mix well till it comes to soft binding consistency.
  • Keep on stirring to prevent it from getting burnt or stuck to base. Take Oddy Ecobake and cut out size as required.
  • Place the mixture on the Oddy Ecobake and keep another piece of Oddy Ecobake and roll out a flat chapati. Keep thickness as required.
  • Give it a square shape by pushing the edges gently inwards. Cut out into squares. Allow it to set for one hour. Separate the pieces and serve.
