Ingredients

 

  • 2 oranges 300 gms halved and deseeded
  • Water 1/4th cup + 2 tbsp
  • Sugar 1 tbsp
  • Orange food colour 1 pinch
  • White bread 2 slices
  • Milk 2 cups
  • Milk powder 1/4th cup
  • Sugar 1/4th cup
  • Cardamom powder 1/4th cup
  • Saffron 2-3 strands
  • Yellow food color 2-3 drops
  • Oddy Uniwraps
  • Sabza seeds
  • Ice cubes
  • Corn flour ½ cup

Directions

 

  • In a mixer add the deseeded orange and make a nice paste. Strain the juice to extract the plain juice. Transfer it in a bowl and add water. Add sugar and orange food colour, mix well and set aside.
  • Take white bread slices and remove the edges. In a mixer add the bread slices and grind to make bread crumbs. In a pan add milk, milk powder, sugar, cardamom powder, saffron strands and give a good stir.
  • Let it boil, keep stirring and add bread crumbs. Let it boil for 10 mins. Add yellow food color. Let it boil. It will form the consistency of a rabdi. Remove it in a bowl. Let it cool for some time. Take Oddy Uniwraps and cover it. Keep it in refrigerator for setting.
  • In a bowl add sabza seeds and water, mix well and keep aside.In a kadai add lots of ice cubes and keep in fridge. Take half of orange juice in a kadai and add corn flour in it and mix well. Avoid any lumps. Add the rest of the juice.
  • Keep the kadai on gas and cool well in medium flame. Keep stirring to avoid any lumps. The mixture will thicken and com together as a halwa consistency. Fill the mixture in a sev maker. Remove the ice kadai from refrigerator, and make press the sev maker on top of it to form orange colored falooda.
  • Dip it in ice to form the perfect falooda shape. Our falooda is ready. Remove rabdi from refrigerator. For assembling, in a tall glass add rose syrup, sabza, falooda, pour rabdi on top. Garnish with tuti fruit on top. Add ice cream to finish off the look. Add chopped nuts and tutti fruti for the final touch. Our Rabdi Falooda is ready.
  • Place the dhokla batter tray on the water. Cover it and let it steam for 10-15 minutes. After 12 minutes, check with a toothpick. If the toothpick comes clean, then dholkla is ready to be served.
