Semolina tuti fruity Cake

Ingredients

 

  • 2 cups semolina (sooji)
  • ½ cup refined oil / butter
  • 1 cup powdered sugar
  • Salt 1 pinch
  • 1 cup curd
  • ½ cup milk
  • 1 tbsp tuti fruity
  • 1 tsp all-purpose flour
  • Cardamom powder
  • ½ tsp baking powder
  • 1/4th tsp baking soda

Directions

 

  • Grind sooji in a mixer jar to form a powdered texture. In a bowl add oil/butter, powdered sugar, salt and whisk well till 1 minute to form a smooth batter. Now add curd and mix well.
  • Add the powdered sooji little by little and mix well to form a smooth batter. Add milk to make the consistency perfect for the cake batter.
  • The batter should be a little thin so that when the batter is kept for resting, the sooji will swell and make the consistency of the batter perfect for baking. Keep the batter covered for 10 mins to rest.
  • In a bowl add tuti fruity and all-purpose flour and mix well. Check the consistency of the cake batter, it should fall like ribbon when taken in a spoon. Add cardamom powder and tuti fruity, mix well
  • Finally, add baking powder and baking soda and mix. Take oddy ecobake sheet and cut it in the shape of circle. Place it in a Kadai to prevent the cake from sticking on the vessel. Pour the batter on the kadai and add a few tuti fruity on top to decorate the cake.
  • Take a foil and cover the kadai, this will help the cake to rise well and cook properly instead of closing it with a lid.
  • Heat and iron kadai in gas stove. Now keep the kadai on top of it. Cook it in low to medium flame for 35-40 mins. Remove from flame once done, let it cool completely. With the help of a knife adjust the sides of the cake and remove it slowly on a plate. Our semolina cake is ready to serve.
