Soft Luscious Puran Poli Recipe

Puran Poli Recipe is a popular Maharashtrian dish. Try out this soft, and luscious with three times the filling of Puran Poli dough without tearing or breaking. While rolling and frying many women face the breaking of Puran Poli, but with the use of Oddy Ecobake papers, you can roll out perfectly round Puran Poli without any breaking or stuffing spillage.

Ingredients

 

  • A bowl of gram flour
  • A bowl of jaggery
  • A spoonful of cardamom and nutmeg powder
  • One spoon of sajuk ghee
  • One bowl of wheat flour
  • Half a cup of flour
  • Salt to taste & Two to three tablespoons of oil

Directions

 

  • Take one cup channa dal, wash it thoroughly 2-3 times, and soak it for at least 2 hours. Give the dal a boil in a cooker along with the soaked water, add 1 tsp oil, and water level sufficient to cover the dal.
  • In a flat plat, take one cup wheat flour, half cup maida, one tsp oil and mix well. Then kneed a soft dough.
  • Once the dough is ready, take very little water and kneed again, then take very little oil and kneed once again. Repeat this step 4-5 times, and lastly kneed with one tsp oil.
  • Now check the boiled dal, add one cup of finely chopped jaggery and one tsp ghee and give it a rough mix. Then put it on slow flame in a flat pan type vessel and keep stirring and mixing till it jaggery and ghee don't melt with the dal.
  • Keep on mixing till it forms a soft dough like consistency. Then lastly scrape a Nutmeg (Jaiphal) and little elaichi powder. Mix well. Add the nutmeg add elaichi powder last.
  • Next pour the puran batter in a strainer and press and strain the batter. This will give it a consistent and smooth texture. Now make soft balls of the puran batter. Take the wheat dough and pour one tsp oil and kneed again.
  • Then form balls of the wheat dough and press flat around the corners and inside the dough add the puran ball.
  • Keep on pressing the puran ball with help of finger tips inside the dough, at the same time with gentle pressure pull the dough upwards till the whole puran batter is not completely closed within the dough.
  • Lastly seal the dough so that batter doesn't come out while rolling. Now place Oddy Ecobake paper cut into square and place the puran poli ball into dry maida flour and onto the paper and flattern it with finer tips.
  • Then with a rolling pin flatten the ball around the edges. Keep on turning the paper instead of the dough. This will help in equal pressure and same thickness of the puran poli.
  • Now slowly lift the poli off the paper and place it on a hot tava or pan. When one side is slightly brown, then add ghee or oil and turn the other side.
  • Fry nicely on both sides on slow flame and turn the sides only twice. In this way, the puran is nicely cooked without breaking and spillage.
