Ingredients

 

  • 300 gram curd
  • Sweet chutney: 1/4 cup Tamarind, 1/3 cup jaggery, 1/2 tsp salt, 1/2 tsp black salt, 1/2 tsp dry ginger powder, 1 tsp Kashmiri red chili powder, 1/2 tsp roasted cumin powder.
  • Green chutney: 1/2 cup chopped coriander leaves, 1/2 cup mint leaves, 2 pods garlic, 2 pieces ginger,
  • Green chutney: 1 green chili, 1/2 salt, 1/2 tsp black salt, 1/4 tsp roasted cumin powder, 1 tsp sugar, 2 pinchs asafoetida, half lime juice, 2 tsp alu bhujia, and one ice cube.
  • wooden platter, Oddy Ecobake, papdi as required
  • For topping: 1 chopped onion, 1 tomato and few chopped boiled potato pieces,
  • For topping: boiled green moong dal, green chuteny, sweet chuteny, black salt, roasted cumin powder, and red chili powder.
  • For toppings: finely sliced beetroot slices, nylon sev, pomegranate and mint leaves

Directions

 

  • Take 300-gram curd and keep it in a muslin cloth. Tighten the cloth and hang it for one hour to drain the excess water.
  • For Sweet chutney - Soak tamarind in lukewarm water for one hour. Mash it to get the pulp. Strain the pulp in a pan, add jaggery, salt, black salt, dry ginger powder, Kashmiri red chili powder, roasted cumin powder, and mix well.
  • Green chutney - Take chopped coriander leaves, mint leaves, garlic, ginger, green chili, salt, black salt, roasted cumin powder, sugar, asafoetida, lime juice, alu bhujia, and ice cube. Grind it well.
  • Take the hung curd and give it a mix. Take a wooden platter. Take the required Oddy Ecobake and cut it into a circle. Place the Oddy Ecobake in the center and stick the edges on the platter with cello tape.
  • Apply the curd on the platter with the backside of the spoon. Add one chopped onion, tomato and boiled potato, boiled green moong dal.
  • Add sweet chutney, and green chutney. Sprinkle black salt, roasted cumin powder, and red chili powder. Add finely sliced beetroot slices. Add nylon sev, pomegranate and mint leaves. Add papdi at the corners.
