Eggless Christmas Plum Cake

About the Recipe

Plum cake is a basic fruit cake that may be made with or without eggs. It is made with dry fruits and served. Despite being a dessert, plum cakes are believed to be rich in several nutrients, making it a healthy meal option. The plum cake was baked spongy, and since it was lined with Oddy Ecobake Brown, which is useful to use and reused numerous times, demolding it was pretty simple.

Ingredients

 

  • Sugar-1/3 cup & Water- 1/3 cup & Black raisins-2tbsp
  • Dried kiwi-2 tbsp & Dried apricots-2 tbsp & Chopped cherry-2 tbsp
  • Chopped almonds-2 tbsp & Chopped cashew-2 tbsp & Cherry-2 Tbsp
  • Walnut-2 Tbsp & Wet dates-2 Tbsp & Tutti -frutti-3 Tbsp
  • Cloves-3 Pieces & Green cardamom-3 Pieces & All-purpose flour-1 cup
  • Orange juice - 1/2 Cup & Sugar-1/3 Cup & Cinnamon-1/2 inch
  • Baking powder-1 tsp & Baking soda -1/2 tsp & Milk powder -1/3 cup
  • Black pepper-2 & Cardamom powder-1/4 tsp & Dry ginger powder-1/2 tsp
  • Oil-1/4 cup & Condensed milk-1/8 cup
  • Oddy Ecobake Brown

Directions

 

  • Melt sugar in a pan until it caramelizes. Add little water to it after it caramelizes and turns brown; stir well; and turn off the flame after it comes to a boil.
  • Add dry fruits and nuts to it, stir well, and boil them in the caramelized syrup. Turn off the flame and let it cool completely. Add orange juice to it, mix well, and let it rest. Line a heart-shaped baking pan with Oddy Ecobake Brown.
  • Grind sugar along with cinnamon, nutmeg, cloves, pepper, cardamom powder and dry ginger powder. Add oil and condensed milk to a bowl and whisk well. Now add the soaked dry fruits to it and add sifted sugar powder along with the dry ingredients and mix well with the dried fruits.
  • Mix well with water gradually using the cut and fold method to make a smooth batter. Shift the batter into the baking pan; spread and tap well; and garnish with dry fruits. Cover and bake it for 25 minutes at low heat in a preheated cooker with a wire stand in it.
  • Remove the lid and add dry fruits on top. Cover and bake for another 15 minutes. Remove the lid and check with a toothpick—a clean toothpick means a perfectly baked cake.
  • When completely cool, demold and remove Oddy Ecobake and slice. The soft and spongy plum cake is ready.
