Bakery style sponge cake at home

Have you wondered how the bakery cakes are fluffly, big and spongy? A secret ingredient is added with a small additional step in the cake making process. I am exactly going to show you what that is and how to make such a super spongy cake bakery style. Don’t forget to use Oddy Ecobake as the baking sheet. It is eco-friendly and reusable.   • Water 100 gms
  • Oddy Ecobake
  • Cake gel 1/4th tsp
  • Vanilla essence 2-3 drops
  • Chocolate cake premix 180 gms
  • Oil tbsp



  • In a bowl add water, cake gel and vanilla essence and whisk well to form a frothy mixture. The consistency should be like egg whites. Once you get the desired consistency add cake premix and water to form the cake batter.
  • Make sure the batter is smooth like the consistency of ribbon. Line the baking tin with Oddy Ecobake. Oddy Ecobake helps in easy demolding of the cake. Pour the cake batter on it. And tap to remove any air bubbles from it.
  • Bake the cake at 180 degrees for 25-30 mins. You can see that the cake has risen beautifully. Bakery’s use cake gel to form the perfect spongy cake. Demold the cake and enjoy with your favourite toppings or simple add the whipping cream, cherry and enjoy.
