About the Recipe

Brown chickpeas that have been cooked, all-purpose flour, spices, and seasonings are used to make Chana Chor Mathari, a common North Indian snack of savory, salty, flaky, and crispy crackers. They are suitable for snacking on during tea. You can enjoy them for a few days after making them in bulk and storing them in an airtight container. Between Oddy Ecobake, the matharis are pressed to a thin layer. When you are producing anything in large quantities, Oddy Ecobake is practical and reusable.

Ingredients

 

  • Brown chickpeas- ½ cup & Water for boiling chickpeas - 1 cup
  • Salt as per taste & Wheat flour- ½ cup
  • Black pepper powder - ¼ tsp & Oil -1 tbsp + for frying
  • Turmeric powder-1/8 tsp & Asafoetida- 1/8 tsp
  • For masala: Black salt -¼ tsp & Dry mango powder - ¼ tsp
  • Kashmiri red chilli powder -½ tsp & Chaat masala powder- ½ tsp
  • Oddy Ecobake

Directions

 

  • Wash and soak brown chickpeas in hot water for 5–6 hours. Cook it with water and salt for 6 whistles. Drain the water from it after cooking and keep it aside.
  • Then mash the boiled chickpeas and add wheat flour, black pepper powder, oil, turmeric powder, and salt. Knead well to make a tight dough.
  • Add water if needed to the dough to adjust the consistency. Pinch small roundels from the dough and set aside.
  • Press each of them between Oddy Ecobake flat and thin as shown using the back of a cup to make matharis.
  • Arrange them on a cloth to dry for 30 minutes. To make masala, mix the spice powders together.
  • Heat oil in a pan; fry the prepared matharis until they turn crisp and golden brown on both sides on a low flame.
  • Remove them from the oil and take them to a plate. Sprinkle with prepared masala and serve. You can also store them in an airtight container.
