Grapes Glaze Cake

Ingredients

 

  • Oddy Ecobake
  • 2 cups deseeded grapes
  • Sugar ½ cup
  • 5 inch cake tin
  • Milk ½ cup
  • Vinegar 1.5 tsp
  • Sunflower oil 2 tbsp
  • Vanilla essence ½ tsp
  • Powdered sugar ½ cup
  • Maida ½ cup + 2 tbsp
  • Milk powder 3 tsp
  • Baking powder ¾ tsp
  • Baking soda ¼ tsp
  • Whipping cream 3/4th cup
  • Corn flour 1 tbsp

Directions

 

  • Wash 2 cups grapes and grind it in a mixer. Strain the mixture nicely. With the leftover grapes squash add glass water and again grind to form juice. Strain it well.
  • Transfer the grape juice in a pan and add sugar, stir well and cook nicely. After sometime you will see brown-colored bubbles. Remove those and keep on stirring and cooking on low to medium flame. Check the consistency, it should be sauce like. Remove from heat as it will thicken more when cooled. Our grape sauce is ready
  • In a bowl add half cup milk and vinegar, mix well and let it rest for 10 mins. Add oil, vanilla essence, powdered sugar and mix well. Add 3 spoons of grape juice and mix well.
  • Sieve maida, milk powder, baking powder, baking soda together and blend well. Add milk if you want to adjust the consistency. Line the baking tin with Oddy Ecobake. Pour the cake batter in it and tap to remove any air bubbles from it.
  • Preheat kadai for 10 mins. Keep a wire stand and place baking tin in it. Cover it with a lid and cook on low flame for 40 mins. For baking in oven, preheat the oven in 160 degrees and bake for 30-35 mins. Demold the cake once cooled.
  • Add chilled whipping cream in a bowl and beat it till stiff peaks form. Cut the cake into 3 layers. For assembling the cake, place the cake board and apply a little whipping cream on it. Place the first layer and apply sugar syrup to moist the cake. Now add the grape sauce and spread it evenly. Repeat the same steps for the next two layers.
  • Crumb coat the cake with whipping cream. And smooth out with the help of scrapper. In the remaining grape sauce add 1/3rd cup water and sugar, mix it well till the sugar dissolves. In a bowl add 2-3 tbsp water, add cornflour in it and mix well to form a slurry. Add the slurry to grape mixture and stir well. Keep on stirring and when it turns semi thick remove from heat.
  • Pour this glaze on top of the cake and on sides as well. Make rossets and star with the help of nozzle. Add leaves with green colored whipping cream. Add sugar balls for decoration. Add border for the cake. Our Grape glaze cake is ready.
