Perfect Red Velvet Cake

  • Oddy Ecobake
  • 6-inch cake tin
  • Fresh curd 80 gms
  • Powdered sugar 80 gms
  • Milk 80 ml
  • Oil 60 ml
  • Vanilla Essence 1 tsp
  • Maida 100 gms
  • Milk powder 1/4th cup
  • Baking powder 3/4th tsp
  • Baking soda 1/4th tsp
  • Cocoa powder 1 tsp
  • milk 1-2 tbsp
  • red gel food color 5-6 drops
  • For frosting: Paneer 100 gms, Milk 3-4 tsp, Salt 2 pinches, Vanilla essence 1/4th tsp, Powdered sugar 3 tbsp
  • Chilled whipping cream ¾ cup
  • Noor 11 nozzle
  • Star shaped nozzle



  • In a bowl add fresh curd, powdered sugar, milk, oil and whisk well. Add vanilla essence and mix well. Make sure the sugar gets completely dissolved. Sieve maida, milk powder, baking powder, baking soda and cocoa powder together and mix in the batter. Whisk well. Add milk and red gel food color and give a stir. Our cake batter is ready.
  • Line the baking tin with Oddy Ecobake. Oddy Ecobake helps in easy demolding of the cake. Pour the cake batter in baking tin. Tap the tin to remove air bubbles. Heat a kadai covered with a wire stand in it for 15 mins. Place the tin in kadai and bake covered for 40 mins on low flame or preheat the oven at 160 degrees and bake for 35 mins.
  • In a mixer jar add panner, milk, salt and vanilla essence. Blend it into a smooth creamy paste. Adjust milk accordingly. Do not add more milk or else our frosting will turn very liquid. Transfer it in a bowl. Add powdered sugar and mix well. Whip chilled cream till stiff peaks occur. Once baked remove the cake and let it cool down completely. Demold the cake. Cut the cake into three layers.
  • For assembling the cake, take the cake board and apply a little whipping cream. Keep one layer of cake. Add sugar syrup to moist the cake. Add cream cheese frosting and spread well. You can add white chocolate chips or white chocolate shavings if you want.
  • Repeat the same process for the other two layers. Add cream cheese on the top and sides of the cake well. Crumb coat the cake with white whipping cream and even it out with a scrapper. Refrigerate the cake for half an hour.
  • Make flowers with noor 11 nozzle as shown. Take some sponge cake and pulse in a mixer to form cake crumbs. Sprinkle the cake crumbs on the sides and top of the cake. Add the flowers on the cake and make border with star shaped nozzle. Our beautiful red velvet cake is ready.
