Healthy Gundar Pak Recipe

About the Recipe

A traditional Gujarati delicacy, gundar pak, is often made in the winter. It is made using babul gond, jaggery, and ghee. Oddy Ecobake is used to spread and set the khajur pak without the need for additional cleanup.

Ingredients

 

  • 100 gram babul gond & 3/4 to 1 cup ghee
  • 250 gram jaggery & 250 gram mawa { khoya }
  • 1/2 cup almond, 1/2 cup cashew nuts & Oddy Ecobake
  • 4 tbs dry ginger powder & 4 tbs ganthoda powder
  • 1 ts cardemom powder & 1 cup desiccated coconut

Directions

 

  • Grind almonds and cashews in a mixer jar to a fine powder. Melt mawa in a pan and make it into a thick paste. Fry gundar in ghee and keep them aside. Take a tray lined with Oddy Ecobake and crush fried gundar on it.
  • Melt jaggery in ghee in a pan, as shown. Add cashew and almond powder, dry ginger powder, ganthoda powder, cardemom powder, and desiccated coconut to the melted ghee and jaggery mixture.
  • Mix well with the crushed gundar and switch off the stove. Transfer the mixture to the tray lined with Oddy Ecobake and spread it well. Let the mixture settle well for a while. Cut it down into small pieces. Delicious gundar pak is ready!
