Homemade Mango Cake

Delicious Homemade Mango Cake. Try out this easy and relishing mango cake. It has a new design technique. While baking, people have to cut the butter paper into the size of the tray and grease it and still it stuck to the base. Now with Oddy Ecobake cooking paper circles, this job is made easy. It comes in different precut sizes and is very easy and convenient to use.

Ingredients

 

  • 2 cups of vanilla premix. (approx one kg of premix),
  • 1 cup of water, 2/3 tbsp oil and a few drops of aphonso mango essence.
  • whipped cream and mango compote
  • Yellow and orange edible colour
  • Netrual colour gel

Directions

 

  • For the base of the cake, take in a bowl 2 cups of vanilla premix. (approx one kg of premix), add to it one cup of water, 2/3 tbsp oil and a few drops of aphonso mango essence. Mix all the ingredients well.
  • Now take a 70 inches cake tray and line with it Oddy Ecobake cooking paper circles. It comes in precut circle shapes and are very useful to use while baking. Tap and even the batter in the tray and bake it a 180 degree for 35-40 mins.
  • After the cake is baked, allow it to cool. Then cut off the brown cooked edges of the cake and slice it into three equally layers. Next take a bowl of whipped cream and mango compote.
  • Place a sliced layer of cake, add to it whipped cream and one tbsp of mango compote. mix well and cover the slice evenly. Do the same with the remaining layers while placing them one in top of the other.
  • Here you can also use mango puree or small mango pieces into the whipped cream. Cover the cake with cream and evenly layer it. Take a scraper and give the outer side of the cake a good design by rotating the cake. This way a circular cavity will be formed on the cake.
  • Now fill any other colour in the cavity, but since this is a mango cake, we shall fill this with yellow cream (whipped cream and yellow edible colour). Pour in a pipping bag yellow cream filing and even out the colour with a plain scraper.
  • This will give a new texture to the cake, further add the whole yellow layer on the cake and even it nicely. Then with triangle scraper give it a new design by moving it around the cake gently. Even out the cake from the top side.
  • Now for dripping take natural gel add orange colour and edible glitter. Around the edges of the cake, give it a nice full circle drip design. Now take a N24 nozzle and give it a frill design on the top of the cake. For the filling use yellow cream.
  • Then with N46 nozzle make a circle on top of the cake, inside the design of the layers. For this mix, yellow and orange filling together. Now with the same nozzle make a nice border at the base of the cake.
  • Using the same nozzle, make small roses on the one side of the cake. Since it a mango cake, add some tiny mango pieces for toppings. In the centre of the cake the name of the person can be written. Delicious mango cake is ready to be served.
