Idiyappam

Idiyappam is one of the healthiest and most famous South Indian dishes best served with grated coconut or coconut milk. In South Indian cuisine, this comfort food occupies an important place. Check the steps to make delicious and easy Idiyappam. Baking the Idiyappam in trays coated with Oddy Ecobake helps in hassle-free steaming of the Idiyappam. Since Oddy Ecobake is non-sticky, it can be used multiple times.

Ingredients

 

  • Rice flour 2 cups
  • Salt as required
  • Oil 1 tbsp
  • Warm water
  • For chutney: Curry leaves
  • Ginger 2inch
  • 2 dried chillies
  • 1/4th cup peanuts
  • 4 medium sized tomatoes
  • ½ tsp mustard seeds
  • Asefodita 1 pinch
  • Chilli powder 1 tsp

Directions

 

  • In a bowl add the rice flour, salt, oil and warm water. Knead it into a smooth dough and rest for 15 mins. Keep a wet cloth over it.
  • In a saucepan add oil, dried leaves, mustard seeds close the gas flame and add curry leaves and asefodita. Take half of this for the chutney tempering.
  • Now again switch on the gas, add peanuts and roast slightly. Add ginger toss for a minute and add tomatoes, salt and chilli powder. Cook in slow flame for 5-6 mins. Let it cool and grind it into a coarse paste. Add the tempering on top of it and our chutney is ready.
  • Knead the dough once again, grease the Idiyappam vessel with oil and add the dough in it. Take the idli steamer and keep the Oddy Ecobake on the steamer plates. Oddy Ecobake is non-sticky and grease proof which is perfect for making Idiyappams.
  • Now just make the shape of Idiyappams and steam it for 10 mins in medium flame. Remove the Idiyappams and serve hot with chutney.
