Kapni – Easy Marathi Sweet Dish

Kapni is a famous sweet dish from Maharashtra. Easy to make and usually made in the Marathi month of Ashadh. Sweet and crispy, perfect for an evening snack. Ingredients

 

  • 1 cup jaggery
  • 1/2 cup water
  • 2 tbsp dry ginger powder
  • 1 tbsp fennel seeds
  • 2 cups of wheat flour
  • 3 tbsp gram flour
  • Salt 1 pinch
  • 2-3 tbsp poppy seeds
  • Baking soda 1 pinch
  • Oil for frying

Directions

 

  • Add jaggery, dry ginger powder, and fennel seeds add water in a pan, and cook till the jaggery dissolves. Cook it well and let the bubbles occur. Once bubbles forms keep in low flame for 3 mins then let it cool. Strain the water and keep it aside for cooling.
  • In a dish mix wheat flour, gram flour, salt, poppy seeds, and baking soda add hot oil in it. Mix with a spoon and then slowly mix it with your hands.
  • Now add the strained jaggery water and then mix it into a dough and keep for 10 mins.
  • Add 1 tsp oil in rolling pan and roll it like a chapati. The chapatis should neither be thick or thin. Then sprinkle a pinch of poppy seeds and again roll it 3-4 times. Repeat the same process on the other side as well. With the help of the cutter cut it into diagonal shapes.
  • Keep these Kapni in Oddy uniwrap paper foil. Uniwrap paper foil keeps it fresh and does not stick on the foil. Oddy uniwrap foil can be reused again.
  • In a pan heat oil. And when the oil boils add the Kapni pieces fry both sides. It takes less time to cook kapni. Mouth water sweet dish is ready to eat.
