Besan - 1 cup & Rice flour - 1 cup
Oil for frying, Silver vark & Oddy Ecobake
Chopped cashews & Sunflower seeds
Pinch of salt & Cardamom powder
Sugar - 1 cup & Water - 1 cup
Mix gram flour and rice flour with water in a bowl to prepare the batter. Pour the batter over the holes of a grater as shown and into the oil.
Fry them until the drops turn a golden yellow colour. Transfer the fried boondi to a ziplock bag and crush them using a rolling pin.
Prepare sugar syrup by dissolving sugar in water in a pan. Once the sugar melts completely, add the crushed boondi to the sugar syrup and mix well.
Add cashew nuts to the mixture and stir until it turns into a thick mass. Switch off the stove and transfer the sweet to a mould lined with Oddy Ecobake.
Apply silver vark on the sweet and let it set for 10 to 15 minutes. Once it is set, cut the sweet into small pieces and enjoy!
