Crispy Coriander wadi

About the Recipe

A crispy wadi with freshly added coriander leaves. Sprouted moong as a base, and steaming the wadi makes the wadi nutritious. Have it as a snack or for breakfast to make a healthier choice. Health-conscious people can skip the tempering. Oddy Ecobake helps in easy demolding of the wadi.

Ingredients

 

  • Half a bowl of split moong dal
  • Gram dal half bowl
  • 10-15 cloves of garlic
  • Ginger 1 inch
  • Cumin seeds 1 tsp
  • 5-6 green chillies
  • Coriander (finely chopped) 3 bowls
  • Sesame seeds 2-3 spoons
  • ½ tsp carrom seeds crushes
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • salt
  • Jowari flour 4 tbsp (or as required)
  • Oddy Ecobake

Directions

 

  • Soak gram dal and split moong dal separately for 3 hours. In a mixture add garlic, ginger, jeera, chillies and make a coarse paste without adding water. Now add the soaked dal excluding the water. Add just a spoon of water to bind the mixture.
  • Now transfer the wadi mixture in a bowl, add coriander leaves, sesame seeds, carrom seeds, turmeric powder, red chilli powder, salt and jowari flour. Mix well make a soft dough. Add jowari flour to adjust the texture of the wadi mixture.
  • Cover a plate with Oddy Ecobake. This will prevent our wadi from sticking on the plate. Oddy Ecobake is non-sticky and grease-proof and helps to make the perfect coriander wadi. Demolding becomes easy with Oddy Ecobake and also it an also be reused multiple times.
  • Now flatten the wadi mixture with your hands as shown in video. The thickness should be one inch but you can make according to your preference. Sprinkle sesame seeds on top of it.
  • Add water in steamer and bake our Coriander wadi for 10-13 mins. Check once after 10 mins. Remove from steamer once done and let it completely cool down. Demold the Corainder wadi and cut it into equal shapes.
  • You can store these wadis in refrigerator for upto 8 days. In a kadai add oil, once heated nicely fry our coriander wadi on both sides nicely. Serve hot Coriander wadis with chutney and sauce.
