No Curd and Soda Besan Dhokla

About the Recipe

Dhokla is a steamed snack made from gram flour and served with a tempering of spices. This dhokla recipe demonstrates how to make dhokla without curd and soda; instead, we use eno. The batter is steamed in a baking tray lined with Oddy Ecobake Cooking Paper Circles, which are very convenient and hassle-free for baking and steaming.

Ingredients

 

  • Gram flour-1 cup & Water-3/4 cup + 1 cup
  • Sugar-3 tbsp +1 tsp & Asafoetida-1/4 tsp
  • Salt-1/2 tsp +2 pinches & Turmeric-2 pinches
  • Lemon juice- from 2 lemons & Oil- 2 tbsp+1 tbsp
  • Eno & Mustard seeds-1 tbsp
  • Curry leaves & Sesame seeds-1/2 tbsp & Green chilli-4
  • Oddy Ecobake Cooking Paper Circles.

Directions

 

  • Blend together gram flour, water, sugar, asafoetida, salt, turmeric, lime juice, and oil in a blender for 2-3 minutes. Transfer it to a bowl, cover it, and let it rest for 10 minutes.
  • Line a 6-inch baking tray with Oddy Ecobake Cooking Paper Circles and grease with oil on the sides. Mix the batter with Eno, stir well, and leave it for 1 minute.
  • Transfer the batter into the baking tray and steam it in a steamer as shown for 10 minutes on a high flame and then another 10 minutes on a medium flame. Unmold it after it has cooled completely. Cut into pieces as shown.
  • Heat oil in a pan, temper with mustard seeds, green chili, sesame seeds, and curry leaves, and then add water, lime juice, and sugar to it. Pour this tempering on the dhokla and serve.
